Got an impossible-to-scrape layer of honey in the bottom of the jar or bottle? Use it to make this sparkling summer cocktail.
Ingredients
- Last of the honey from the jar or bottle
- 1.5 tsp boiling water
- 3 tsp lemon juice
- 100ml prosecco, chilled
- 1 tbsp elderflower liqueur
- Lemon slices, to serve
- Mint leaves, to serve
- Ice, to serve
Method
- Add the boiling water to the jar or bottle, then shake or stir until the honey dissolves, and comes away from the surface easily
- Mix the honey syrup with lemon juice, prosecco and elderflower liqueur, stirring gently
- Serve in a glass with ice, lemon slices and mint leaves
